Mexican Black Bean Salad for 30
4 cups Cooked black beans
3 cups Cooked corn kernels
1 cup Peppers, chopped red, green or both
½ cup Chopped green onion
1 tsp Coriander powder
1 tsp Cumin powder
1 tbsp Dried oregano
1/3 cup Red wine vinegar
2/3 cup olive or vegetable oil
Salt & Pepper
Toss together, let sit for several hours if possible
Quesidillas
20 wraps Tortillas wraps - whole wheat
3 cups grated cheese
Put one layer of wraps (10) on cookie sheets, toss shredded cheese
on wraps, cover with remaining wraps (10). Bake under broiler until
lightly browned (2 minutes or less), then flip and brown on other
side. Cut wraps into quarters.
